Thanksgiving planning timeline: a 3 week plan for busy families
Three weeks before Thanksgiving is the perfect time to start, and you only need one job per week: the headcount and menu in week 1, the shopping list in week 2, and the cooking schedule in week 3. Thanksgiving is Thursday, November 26, 2026, so that's three Thursdays from November 5.
Here's the whole plan, short enough to stick on the fridge.
Week 1 (3 Thursdays out): headcount and menu
This week is all decisions, no cooking.
- Get the headcount. Text everyone with a yes or no deadline. Count kids separately, they eat less turkey and more rolls.
- Pick the menu. Write every dish down: main, sides, rolls, dessert, drinks. Keep it to what you've made before. Thanksgiving is not the day to try a new recipe.
- Decide who brings what. Put guest names next to dishes. The easiest ones to hand off are rolls, a side, dessert, drinks and ice.
- Check your stuff. Do you have a roasting pan, enough chairs, serving spoons, a big enough fridge? If not, borrow now.
Put the headcount and the who-brings-what list on the fridge. Now nobody has to ask you.
Week 2 (2 Thursdays out): the shopping list
- Write one master list from the menu, sorted by store section.
- Shop the shelf stable stuff now: canned pumpkin, broth, stuffing mix, flour, sugar, spices, foil, disposable pans, napkins.
- Order or buy the turkey. A frozen turkey takes time to thaw. The USDA's general guide is about 24 hours in the fridge for every 4 to 5 pounds. A 16 pound bird needs about 4 days, so it goes in the fridge on Sunday.
- Make one freezer thing: pie crust, cookie dough or cranberry sauce can be made now.
Week 3 (Thanksgiving week): the cooking schedule
This is where the fridge sheet earns its spot. One line per day.
| Day | Job |
|---|---|
| Sunday | Turkey into the fridge to thaw. Buy fresh produce, dairy and bread. |
| Monday | Clean the fridge to make room. Set out serving dishes and label them with sticky notes. |
| Tuesday | Chop onions, celery and anything else for stuffing and sides. Bag and label it. |
| Wednesday | Make pies, cranberry sauce and any make ahead casserole. Set the table. Kids can do this one. |
| Thursday | Turkey in, sides in the oven while it rests, everyone else handles drinks and dishes. |
Labeling the serving dishes on Monday sounds fussy. It's the thing that lets other people help on Thursday without asking you where everything goes.
Worked example: 12 people, 2 hours of cooking on the day
Here's a worked example for a family of 5 hosting 12 total, with 3 guests bringing dishes.
Headcount: 9 adults, 3 kids.
Turkey: A common rule of thumb is about 1 to 1.5 pounds of whole turkey per person, so 12 to 18 pounds. A 16 pound bird covers dinner and leftovers.
Who brings what:
| Dish | Who |
|---|---|
| Turkey, stuffing, gravy | Host |
| Mashed potatoes | Host, made Wednesday |
| Green bean casserole | Guest 1 |
| Rolls and butter | Guest 2 |
| Pumpkin pie and whipped cream | Guest 3 |
| Drinks and ice | Host's partner |
| Table, cups, cleanup crew | Kids |
Thursday timeline for a 3pm dinner:
| Time | What happens |
|---|---|
| 9:00 | Turkey out of the fridge to sit while the oven heats |
| 10:00 | Turkey in the oven |
| 1:30 | Check the turkey, start the potatoes reheating |
| 2:15 | Turkey out to rest, stuffing and casserole in |
| 2:45 | Gravy, rolls warm, drinks out |
| 3:00 | Dinner |
Cooking times depend on your bird and your oven, so check the package and use a meat thermometer. The point of the timeline is that everything has a slot, and the slot is written down.
Give everyone a job
The mental load of Thanksgiving is mostly being the only one who knows the plan. So post the plan.
- Little kids (4 to 7): fold napkins, put a name card at each seat, carry rolls to the table
- Big kids (8 and up): set the table, fill drink cups, run the dishwasher after dinner
- Partner: drinks, ice, coats, the trash run
- Guests: bring their dish hot or ready to heat, and one person on dish duty
When someone asks "what can I do," point at the fridge. The fridge is the referee.
